Sauté onions and garlic in a little olive oil
add 1 litre of vegetable stock
one large potato chopped into small pieces,
Season with ground coriander,
some freshly ground black pepper,
and nutmeg,
finally add a couple of bay leaves
leave to simmer for 45 minutes or
place in a slow cooker
for several hours - mine goes in a slow cooker.
Remove the bay leaves then liquidise before serving -
add some single cream and fresh herbs
